Recipe of calamari in sauce, step by step

There are hundreds of squid recipes : battered, sautéed, in their ink, with noodles, stuffed, squid in tomato sauce, in white sauce, green sauce, with rice ... pufffff, all are delicious, but for me, the best squid recipe on planet earth is what my mother does.

Once You have finished the squids and potatoes, you can use the remaining sauce to prepare some good spaghetti. Here I recommend, when serving the dish, add a generous stream of olive oil.

How to make squid in American sauce

Ingredients:

  • 1 kg of squid
  • 3 tomatoes
  • 1 medium onion
  • 2 cloves of garlic
  • 2 medium potatoes
  • 2 bay leaves
  • Salt
  • Pepper
  • Olive oil

Preparation:

  1. Clean the calamari well, inside and outside with plenty of water. Remove the purple skin that usually has on the outside and cut them in a medium wheel. The tentacles are delicious, you just have to remove the mouth or beak they have in the middle and that's it. Reserve.
  2. Chop the potatoes in medium cubes.
  3. Put the tomatoes, onion and garlic in a blender and grind until a thick sauce with lumps is formed.
  4. Heat a deep pan or a pot with a couple of tablespoons of olive oil. Add the squid and cook until they turn white. During this process they will throw enough broth, that's fine, it's the water that the squid have and it will give flavor to the dish.
  5. Add the previously liquefied sauce, the bay leaves, a pinch of Salt and pepper and cook for 10 minutes over high heat.
  6. After this time add the potatoes, stir a little, and lower the heat in half.
  7. It may have evaporated some liquid, you can add half a cup of water or fish stock. Cover and let cook for 15 minutes or until the potatoes are ready.
